Meatloaf made with Cornflakes

Ingredients

3lbs ground beef
1-12oz box Kellogg's Corn Flakes
(minus 2 cereal bowls full)
1/4 c minced onions (to taste)
3 eggs
1/2 skim milk (or so)
salt and pepper (to taste)

Heat oven to 375 degrees.
Prepare a 9x13 pan. Place 4 slices of bread in the bottom of the pan (heels are fine)

Combine all ingredients in a large bowl,using your hands.It is best to use Kellogg's CornFlakes, the off brands are hard on your hands.

Form one large meatloaf or make 2 as I did, one for now and one to freeze.

Place the formed loaf on the slices of bread. This lets any grease drain into the bread and the pan, not stay in the meatloaf.

Bake at 375 degrees for 45-60 minutes depending on the thickness of the loaf/loaves. You may want to cover the pan with foil to prevent overbrowning.

Optional Topping

Combine Catsup, a little brown sugar, and a couple of squirts of mustard. Mix well and spread the sauce over the loaf. If using this topping, Cover with foil before placing it in the oven. Remove Foil for the last 15 minutes.

This is the recipe my Mom, Nedra, has used forever or close to it. I was in my mid 20's before I knew that other people didn't use cornflakes, but bread crumbs or oatmeal. The KEY ingredient to this is the cornflakes.

It is great the first meal, but the leftover meatloaf sandwiches with Miracle Whip is to die for.
